Bacon Frittata

Ingredients

  • 4 Tbs olive oil
  • 1 onion, chopped
  • 350 gm new potatoes, sliced
  • 4 slices bacon
  • 6 large eggs

Directions

    Heat oil in smallish non-stick skillet. Add onions and potaotes and saute for about 8 minutes, turning occasionally, until soft and golden.Add bacon and cook till browned

    Remove and set aside. Beat eggs in bowl and fold in potato mixture. Return to skillet and cook over low heat about 8 minutes. Place pan under a hot broiler until frittata is set about 3 minutes. Remove from pan and cut into wedges
