- 4 strips bacon
- vegetable oil as needed
- 2 c. flour
- 1 Tbsp. sugar
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 large egg
- 1 c. milk
Directions

1Cut bacon in 1/2-inch pieces.

2Cook bacon in saucepan until golden brown.

3Pour fat through strainer over measuring cup and add vegetable oil if needed to make 1/4 cup.

4Drain bacon on paper towel.

5Heat oven to 400°.

6Grease muffin cups.

7Mix flour, sugar, baking powder, salt and pepper in large bowl.

8Whisk egg, milk and bacon fat in small bowl until egg is well broken up.

9Add bacon and pour over dry ingredients.

10Fold with rubber spatula until dry ingredients are moistened.

11Scoop into pan.

12Bake 15 to 20 minutes.

13Let cool in pan 5 minutes.

14Turn onto rack.
