- 1/2 lb. lean slab bacon, diced
- 3 Tbsp. butter
- 6 medium Russet potatoes, unpeeled and diced
- 1 large green pepper, diced
- 1 medium onion, coarsely chopped
- 1/2 lb. mushrooms, coarsely chopped
- salt
- freshly ground black pepper
Directions

1Saute bacon in large skillet and saute over low heat.

2When evenly browned and the fat is rendered, drain the bacon on paper towels and set it aside.

3Pour off all but 3 tablespoons of the bacon drippings and discard.

4Melt the butter in the pan with the remaining bacon drippings.

5Add the potatoes, green pepper, onion and mushrooms.

6Saute over medium heat until the potatoes are tender, about 20 to 25 minutes, making sure to stir frequently. Add a bit more butter, if necessary, to prevent sticking.

7Add the reserved bacon, salt to taste, and plenty of fresh black pepper. Saute for an additional 5 minutes, to allow flavors to blend. Serve warm.
