Bagel Spread Recipe

Ingredients

  • 1/2 c. Low-fat tofu (frzn then thawed, liquid removed, and pressed to remove as much water as possible)
  • 1 Tbsp. Maple syrup (or possibly to taste)
  • 1 x -(up to)
  • 2 x Cardamom pods, crack open and use seeds only Cinnamon to taste
  • 1/8 c. Currants Water or possibly low-fat soymilk for blending

    I came up with this because I do not eat dairy and wanted something to put on my bagels

    Put all but the currants in a blender and blend till smooth.

    If it is not thick sufficient, you can add in a mix of cornstarch and water which have been heated and thickened to the mix.

    Add in soymilk if it's too thick.

    I always have the tofu in my freezer; it doesn't*have* to be frzn first, but it should be well liquid removed.
