Ingredients

  • 1 large eggplant
  • 2 medium onion, chopped
  • 2 medium tomatoes chopped
  • 2 medium green chillies(chopped finely)
  • 3/4 tsp turmeric powder
  • 1/2 tsp ground cumin
  • 1/2 tsp coriander powder
  • 1/2 tsp red chilli powder(increase or reduce according to heat preference)
  • 1 tsp salt(or to taste)
  • 1 chopped coriander leaves to garnish
  • 1 tbsp vegetable oil
  • 1/2 tsp black mustard seeds

Directions

    Roast eggplant on the stove till the skin is totally charred and the eggplant is mostly cooked.

    Remove the eggplant in a bowl and cover it for 10-15 min
  3. 3
    Meanwhile heat oil in a pan, when hot add the mustard seeds.

    When mustard seeds start to splutter add the green chilled and the onions.cook the onions till they get golden in colour

    Now add turmeric,cumin,coriander powder,chilli powder and cook for a min

    Now add the tomatoes and cook till they are soft and totally cooked

    While the tomatoes are cooking remove the charred skin off the eggplant completely and mash the eggplant lightly with a fork

    When the tomatoes are cooked add the mashed eggplant and the salt and mix well

    Cover and cook on medium low heat for 5 min

    Garnish with coriander leaves and serve with chapatis,Nan or rice
