  • 3 egg whites
  • 4 Tbsp. granulated sugar
  • 1 round layer cake bottom
  • raspberry or strawberry jam
  • 1 pt. vanilla ice cream

Directions

    Beat egg whites until stiff peaks form.

    Carefully fold in sugar.

    Place layer cake bottom on an ovenproof plate.

    Spread jam evenly over bottom.

    Cover with ice cream.

    Immediately spread meringue evenly over top.

    Meringue should cover ice cream completely.

    Bake at 350° for a couple of minutes until meringue has a light brown color.

    Serve immediately.
