  • 1 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/4 c. shortening
  • 1 egg
  • 1 qt. ice cream (brick)
  • 2/3 c. sugar
  • 1/2 tsp. salt
  • 1/2 c. milk
  • 1 tsp. vanilla extract

    Grease and flour 9-inch pan.

    Sift flour with sugar, baking powder and salt into mixing bowl.

    Add shortening and milk.

    Beat 1 1/2 minutes at low speed with mixer or 225 strokes with a spoon. Add egg and vanilla extract.

    Beat 1 1/2 minutes more.

    Pour into pan.

    Bake at 350° for 20 to 25 minutes, until cake springs back when lightly touched in center.
