Baked Barley

  • 1 c. barley, rinsed
  • 1 Tbsp. oil
  • 1/2 c. chopped onions
  • 3 c. chicken broth or 3 c. water and 3 cubes
  • 1/2 tsp. dill seed

Directions

    Heat oil in a heavy skillet.

    Add barley.

    Stir until browned. Add onions, broth and dill.

    Bring to a boil and cover.

    Bake at 400° until barley is tender and liquid is absorbed (40 minutes). Fluff with a fork to serve.
