Ingredients

  • 3/4 c. dried beans (try a mixture of various beans or use canned beans)
  • 1 c. water
  • 1 c. apple juice
  • 1/4 tsp. salt (optional)
  • 1 Tbsp. molasses
  • 1/4 c. ketchup
  • 1/4 tsp. vinegar
  • 1/4 tsp. prepared mustard
  • 1/4 c. chopped tomato or green pepper

Directions

    Bring apple juice and water to a boil.

    Add beans and cook until almost tender, about 2 hours.

    Drain beans, saving liquid, and add all other ingredients except vegetables.

    Cover and bake in a 250° oven for 2 to 3 hours.

    Uncover for last 1/2 hour of baking and add tomato or green pepper.

    If beans get dry, add some of the bean liquid.
