- 1 lb. pea beans
- 5 c. water
- 2 tsp. dry mustard
- 1/4 tsp. pepper
- 1 Tbsp. salt
- 3 quartered and peeled medium onions
- 1/4 c. molasses
- 2 Tbsp. sweet pickle juice
- 1/4 lb. salt pork
Directions

1Pick over beans; wash.

2Cover with 3 cups water and 1 tablespoon baking soda.

3Soak overnight or 8 hours; then add 2 cups water, mustard and next 6 ingredients.

4Cover and boil 20 minutes.

5Heat oven to 250°.

6Cut salt pork into small pieces and place in a bean pot or casserole dish.

7Cover with hot beans and their liquid.
-
8Sprinkle pepper on top.

9Cover and bake in a slow 250° oven or until tender.

10Add 3/4 water when 2/3 done, if necessary.
