Ingredients

  • 2 lb. Navy, Pea or Soldier Beans
  • 1 tsp. Baking Soda
  • 1 peeled whole Onion
  • 1/2 - 1 lb. lean Salt Pork
  • 2 tsp. Dry Mustard
  • 1/2 - 2/3 c. dark Molasses
  • 1/2 tsp. Salt

Directions

    Soak overnight the beans.

    Parboil until beans begin to foam with Baking Soda.
  3. 3
    Place Onion in bottom of pot.
  4. 4
    Add beans and cover with hot water.
  5. 5
    Stir in the Salt Pork, Dry Mustard, Molasses and Salt.

    Mix and bake for 6 hours, stirring occasionally.
