  • 2 lb. beans (California pea beans or New York State beans preferred)
  • 1/2 lb. sauteed bacon or 1/2 lb. salt pork
  • 8 Tbsp. sugar
  • 2/3 c. molasses
  • 2 tsp. dry mustard
  • 4 tsp. salt
  • 1/2 tsp. pepper
  • 1 medium size onion
  • 1 1/2 qt. water

Directions

    Soak beans overnight. In the morning, parboil them for 10 minutes with a teaspoon of baking soda.

    Then run cold water through the beans in a colander.
