Ingredients

  • 1 qt. navy beans
  • 1/2 salt pork
  • 1/4 tsp. pepper
  • 1/2 tsp. dry mustard
  • 1/2 c. dark molasses
  • 8 c. water
  • 1 tsp. salt
  • 1/2 c. finely chopped onion
  • 1/2 c. catsup
  • 1/4 c. brown sugar

    Wash and sort beans.

    Cover with cold water; let soak overnight.

    In the morning, place beans in Dutch oven.
  4. 4
    Cover with fresh water.

    Cover; cook to boiling point for 30 minutes.

    Skim off.

    Cut the salt pork into strips and fry until golden brown. Add to beans, along with salt, pepper, mustard, molasses, onion, brown sugar and catsup.

    Cover and simmer over low heat, or bake for several hours.

    Serves 10 to 12.
