Baked Beef And Cabbage

Ingredients
- 1 lb. lean ground beef
- 1 medium onion, chopped
- oil for frying
- 1/2 c. uncooked rice
- 1 tsp. salt
- pepper to taste
- 1 small head cabbage, shredded
- 2 c. tomato juice or soup plus 2 c. water and bouillon cube
Directions

1Have cabbage shredded coarsely to 5 or 6 cups full.

2Spread half in large buttered casserole or roasting pan.

3Heat oil in frypan and add beef, onion, rice, salt and pepper.

4Cook and stir together but do not brown, about 10 minutes.

5Spoon meat mixture over cabbage.

6Top with remaining cabbage.

7Heat tomatoes with water and bouillon cube to boiling and pour over all.

8Cover and bake for 1 hour at 350° or until cabbage is tender.
