- 1 dressed catfish (3 to 4 lb.)
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 c. soft bread cubes (or corn bread)
- 2 Tbsp. snipped parsley
- broth (recipe follows)
- 1 Tbsp. pickle relish
- 1 small onion, finely chopped
- 1 egg, beaten
- 1/2 tsp. butter or margarine, melted
- 6 slices lean salt pork
Directions

1Heat oven to 350°.

2Wash catfish in cold water; pat dry with paper towels.

3Rub cavity with salt and pepper.

4Mix bread cubes, parsley, pickle relish, egg, salt and 1/4 teaspoon pepper.

5Spoon lightly into cavity.

6Close opening with skewers; lace with string.

7Brush fish with butter.

8Cut 3 slits in each side and place a slice of salt pork in each slit.

9Place fish in greased shallow baking dish; bake uncovered, spooning broth over fish occasionally until fish flakes easily with fork (45 to 60 minutes).
