Baked Chicken With Lima Beans

Ingredients

  • 3 1/2 ounces lima beans dried, soaked overnight, drained
  • 1/4 cup olive oil
  • 6 chicken drumsticks
  • 1 red onion chopped
  • 1 stalk celery chopped
  • 1 red bell pepper deseeded, chopped
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 2 bay leaves dried
  • 2 sprigs fresh rosemary
  • 1/2 cup white wine
  • 2 tablespoons tomato paste
  • 2 cups chicken stock
  • 27 ounces chopped tomatoes
  • mixed greens to serve

    Preheat oven to 375°F.

    Place lima beans in a large saucepan, cover with water then bring to a boil. Reduce heat and simmer for 15 mins. Drain.

    Meanwhile, heat oil in a large Dutch oven over high heat. Cook chicken for 3-4 mins, until browned all over. Set aside. Add onion, celery and pepper and saute for 4-5 mins, until tender. Add herbs. Deglaze pan with wine then simmer for 2 mins, until liquid is almost evaporated. Add tomato paste then stock, tomatoes and chicken. Bring to a boil over high heat, stirring occasionally. Transfer to oven and bake for 15-20 mins. Add beans and cook for another 15 mins.
