Baked Cod Fillets

Ingredients

  • 1 onion, minced
  • 1/2 c. minced celery
  • 6 Tbsp. butter
  • 2 c. solid-pack tomatoes, broken up
  • 1 bay leaf
  • 1/4 tsp. thyme
  • 1 Tbsp. brown sugar
  • 2 Tbsp. white wine vinegar
  • salt and pepper to taste
  • 2 lb. fresh cod, haddock or halibut fillets

    Saute onion and celery in butter until golden.

    Add other ingredients, except for fish.

    Simmer covered for 30 minutes. Preheat oven to 350°.

    Cut fillets into serving pieces and put in a greased baking dish.

    Pour sauce over fish.

    Bake for 30 minutes or until fish flakes easily.

    Serves 5 to 6.
