Baked Cod Fillets

- 1 onion, minced
- 1/2 c. minced celery
- 6 Tbsp. butter
- 2 c. solid-pack tomatoes, broken up
- 1 bay leaf
- 1/4 tsp. thyme
- 1 Tbsp. brown sugar
- 2 Tbsp. white wine vinegar
- salt and pepper to taste
- 2 lb. fresh cod, haddock or halibut fillets
Directions

1Saute onion and celery in butter until golden.

2Add other ingredients, except for fish.

3Simmer covered for 30 minutes. Preheat oven to 350°.

4Cut fillets into serving pieces and put in a greased baking dish.

5Pour sauce over fish.

6Bake for 30 minutes or until fish flakes easily.

7Serves 5 to 6.
