Baked Cod with Marinated Tomatoes

  • 25 each Cod fish filets (6 oz.)
  • 3-1/4 cups red tomatoes, finely chopped
  • 1-1/2 cups yellow tomatoes, finely chopped
  • 1 cup KRAFT Light Italian Reduced Fat Dressing
  • 1/2 cup fresh chives, chopped

Directions

    Spray 2 full hotel pans with cooking spray (or 1 half hotel pan for trial recipe).

    Place fish in single layer in pans.

    Bake in 425F-convection oven for 7 to 9 minutes or until fish flakes easily with fork.

    Toss tomatoes with dressing and chives.

    For each serving: Place 1 fish piece on serving plate; top with 3 Tbsp.
