  • 1 stick butter or substitute
  • 1 onion
  • 1 c. cooked rice
  • 2 (No. 2) cans corn
  • green bell pepper to taste
  • 1 small jar pimentos
  • 1 egg
  • Velveeta cheese (enough for topping)

Directions

    Saute butter, onion and bell pepper.

    Mix corn, pimento, rice and egg.

    Add onion and bell pepper, salt and pepper.

    Bake at 350° for 30 minutes.

    Add grated Velveeta cheese on top when almost done.
