- 2 eggs
- 1 Tbsp. dry mustard
- 1 Tbsp. sugar
- pinch of salt
- 1/3 c. vinegar
- 3 to 4 lb. corned beef brisket
Directions

1Beat eggs; add mustard, sugar, salt and vinegar.

2Boil until thick, then spread this mixture on the fat side of corned beef. Place on rack in pan.

3Cover with double fold foil wrap.

4Pinch foil around sides of pan.

5Bake for 7 hours at 260°; cut thin to serve.
