Baked Eggplant

  • 1/2 c. mayonnaise
  • 1/4 c. finely chopped onion
  • pepper to taste
  • 1 medium eggplant, peeled and sliced into 1/4-inch slices
  • 32 round buttery crackers, crushed

Directions

    In small bowl, combine mayonnaise, onion and pepper.

    Brush on both sides of eggplant; dip in cracker crumbs.

    Bake on ungreased cookie sheet in 350° oven, turning once until browned, about 30 minutes.

    Serve hot.

    Always soak sliced eggplant in salted water about 30 minutes before cooking.
