- 1/2 c. mayonnaise
- 1/4 c. finely chopped onion
- pepper to taste
- 1 medium eggplant, peeled and sliced into 1/4-inch slices
- 32 round buttery crackers, crushed
Directions

1In small bowl, combine mayonnaise, onion and pepper.

2Brush on both sides of eggplant; dip in cracker crumbs.

3Bake on ungreased cookie sheet in 350° oven, turning once until browned, about 30 minutes.

4Serve hot.

5Always soak sliced eggplant in salted water about 30 minutes before cooking.
