- 2 large eggplant, sliced
- 2 c. tomato juice or spaghetti sauce
- 3 Tbsp. grated Parmesan cheese
- 1 green pepper, cut up in strips
- salt, pepper and minced garlic
- 2 Tbsp. chopped parsley
Directions

1In 9 x 13-inch baking dish, alternate layers of tomato juice, sliced eggplant (which have been sprinkled with salt and pepper), garlic and parsley.

2Top all with cheese and strips of green pepper.

3Cover with foil, slash the top of foil.

4Bake at 350° for 45 minutes.
