- 1 eggplant
- 1 egg, beaten
- 3 slices stale bread, soaked in water and squeezed
- salt and pepper to taste
- 1 onion
- tomato slices (optional)
- bread crumbs
- 2 Tbsp. butter
Directions

1Boil eggplant in salted water until tender.

2Drain and cool. Remove skin.

3Place in a bowl and chop.

4Add egg, bread, salt and pepper.

5Fry onion in butter until brown.

6Mix all together well. Put in greased baking dish and top with butter and crumbs.

7Add tomato slices before crumbs, if desired.

8Bake at 350° about 20 minutes or until brown.
