Baked-Filled Zucchini

  • 3 zucchini (1 to 2 inches thick)
  • 1 Tbsp. butter
  • 1/4 c. onion, chopped
  • 1/2 c. celery, chopped
  • 1 c. ground beef or sausage, cooked
  • 1 slice bread, crumbed
  • 1 (8 oz.) tomato sauce
  • cheese

Directions

    Cook zucchini in boiling water for 3 minutes.

    Cut in half lengthwise and scoop out pulp.

    Salt and pepper.

    Melt butter. Saute onion, celery and ground beef.

    Add bread crumbs and the scooped out pulp with tomato sauce.

    Stir together.

    Stuff zucchini.

    Place in a shallow pan.

    Sprinkle with cheese.

    Bake at 375° for 30 minutes.
