- 1/2 c. liquid margarine
- juice of 2 limes
- salt and pepper to taste
- pressed garlic to taste
- 3 lb. skinned fish fillets (orange roughy)
- 1/2 c. Parmesan cheese
- 2 (3 oz.) cans fried onions, crushed
Directions

1Preheat oven to 400°.

2Beat margarine, lime juice, salt, pepper and garlic until smooth.

3Spread liberally on both sides of fillets; marinate for 1 hour in a Pyrex baking dish.

4Sprinkle with Parmesan cheese and crushed onions.

5Bake for 15 minutes, or until just done, depending on thickness of fish.

6Serves 6 to 8.
