- 3 Tablespoons Olive Oil
- 2 whole Limes, Divided
- 1 whole Red Chili, Seeds Removed And Finely Chopped
- 2 cloves Garlic, Minced
- 2 sprigs Mint Leaves, Finely Chopped
- 4 whole Chicken Thighs
Directions

1In a bowl, add olive oil, zest and juice of 1 lime, red chili, garlic, and mint.

2Stir to combine.

3Place chicken thighs in a oven dish and pour marinade over chicken.

4Place in the refrigerator and marinade 3060 minutes.

5Preheat oven to 170 degrees C (340 degrees F).

6Heat a pan over high heat.

7When ready, sear chicken in pan, skin side down.

8Fry roughly 510 minutes, until skin is crisp.

9When skin is crisp, return chicken to the pan with the marinade.

10Place in the oven and cook for 30 minutes, or until chicken is fully cooked and juices run clear.

11Once you plate the chicken, cut the remaining lime into wedges and squeeze a little juice over the chicken.
