Ingredients
- 3/4 c. chopped onion
- 2 cloves garlic, minced
- 1 Tbsp. olive oil
- 1 Tbsp. cornstarch
- 1 (16 oz.) can tomatoes
- salt (optional)
- 1/3 c. sliced stuffed olives
- 1 tsp. chopped red or green chili pepper
- 1 1/2 lb. flounder fillets or other mild fish
- 1 Tbsp. fresh lemon juice
Directions

1Preheat oven to 375°.

2In medium skillet, saute onion and garlic in olive oil until soft.

3Mix in cornstarch.

4Add tomatoes and their juice; mix until well blended.

5Cook over medium-high heat until sauce thickens.

6Stir in olives and chili pepper. Spoon half the sauce into a baking pan large enough to hold the fillets in one layer.

7Place fish over sauce; sprinkle with lemon juice (salt optional).

8Cover with remaining sauce; bake for 10 minutes, or until fillets flake easily.

9Serves 6.
