- 1 1/2 pounds flounder fillets*
- Salt and pepper
- 3 ounces sherry
- 1 1/2 cups (2 sticks) melted butter
- 2 cups breadcrumbs
Directions

1Preheat the oven to 375 degrees.

2Lay the flounder fillets in a buttered 13 x 9 x 2-inch baking dish.

3Season with salt and pepper to taste.

4Pour the sherry over the fish, then pour on half of the butter.

5Cover the fish with breadcrumbs and pour the remaining butter over the crumbs.

6Bake for 15 minutes.

7*Cooked lobster meat or raw scallops may be substituted for flounder.
