Baked Herbed Potatoes

  • 6 c. diced potatoes
  • 3/4 c. minced celery and leaves
  • 1/4 c. margarine, melted
  • 1/8 c. parsley flakes
  • 1 1/3 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 tsp. poultry seasoning

Directions

    Cook cubed potatoes in small amount boiling water for 5 minutes.

    Drain and add remaining ingredients (which have been mixed together) all except parsley.

    Put in 2-quart casserole; cover and bake at 325° for 1 hour.

    Uncover and bake 15 minutes longer.

    Sprinkle with parsley.
