Ingredients

  • 2 cups brown lentils (type that does not require soaking)
  • 2 onions
  • 2 tomatoes
  • 2 garlic cloves, chopped
  • 12 cup chopped parsley
  • 1 cup white wine
  • 1 cup vegetable stock
  • 1 teaspoon good curry, mixture
  • 1 pinch salt
  • 1 pinch ginger
  • 12 cup dried peaches, chopped & soaked
  • 12 cup dried apricot, chopped & soaked
  • 12 cup raisins or 12 cup sultana, soaked
  • 12 cup garden peas, cooked & pureed
  • 2 tablespoons plain yogurt
  • 2 eggs
  • 3 tablespoons milk

Directions

    Rinse lentils, add water, wine& salt.

    Bring to boil.

    Add curry, ginger, tomatoes, garlic& onions.

    Cook till lentils are soft.

    If water is needed add little at a time, so draining is not necessary.

    Remove from heat.

    Add all dried fruit, yoghurt, peas& parsley.

    Put mixture in oven dish.

    Beat eggs with milk and pour over.

    Bake at 180C until golden on top.
