Baked Persimmon Pudding

- 2 c. persimmon pulp
- 3 eggs
- 1 3/4 c. can milk
- 2 c. sifted flour
- 1 tsp. soda
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 1/2 c. brown sugar
- 3 Tbsp. melted margarine
Directions

1Mix the persimmon pulp, beaten eggs and milk.

2Sift the dry ingredients together and pour the liquid mixture into them.

3Stir in melted margarine.

4Pour into shallow greased pan to the depth of about 2-inches.

5Bake for about 1 hour in a very moderate oven (300° to 325°).

6When cold, cut into squares and serve with whipped topping or ice cream.
