Baked Pineapple

  • 1 can crushed pineapple
  • 3/4 c. sugar
  • 1 1/2 Tbsp. cornstarch
  • 2 eggs
  • 1 tsp. cinnamon
  • 1 pat butter

Directions

    Beat eggs until frothy.

    Add sugar, butter, cinnamon and cornstarch.

    Beat until well mixed.

    Fold in can of crushed pineapple, including juice.

    Pour into a greased ovenproof bowl. Bake at 325° until you have a custard like consistency

    (at least 1 hour).
