- 2 shallots minced
- 1/2 cup butter
- 2 pounds pompano fillets 4 fillets
- 1 cup hazelnuts chopped
- 1 cup brandy
Directions

1Saute shallots in butter.

2Place pompano fillets in a shallow buttered baking pan.

3Sprinkle generously with the hazelnuts.

4Pour melted butter and shallots over pompano and hazelnuts.

5Bake 20 minutes at 450 , basting every 5 minutes to prevent dryness.

6Remove from oven.

7Add the brandy and flame.
