Baked Rabbit

Ingredients

  • 1 fryer rabbit (2 to 3 lb.), cut up in serving size pieces
  • 1 large onion, chopped
  • 2 bay leaves
  • 5 to 6 whole cloves
  • 1/4 tsp. ginger
  • 1/4 tsp. garlic salt
  • salt and pepper to taste
  • 2 Tbsp. oil
  • 1 Tbsp. butter
  • 1 Tbsp. chicken flavor bouillon
  • 1/2 c. water

Directions

    Soak rabbit pieces in 1 1/2 tablespoons of salt water to cover for 2 hours.

    Rinse, drain and dry.

    Roll in flour and brown in the oil and butter.

    Add onion and spices.

    Cover tightly and bake in a 325° oven for 1/2 hour.

    Remove from oven.

    Turn rabbit pieces. Add chicken bouillon and water.

    Return to oven and bake 1 hour or until done.
