Ingredients
- 1 lb. scallops
- 3 Tbsp. butter
- 1/2 tsp. pepper
- 1/2 medium sweet onion, minced
- 1 garlic clove, pressed
- 1/4 c. medium-hot salsa (optional)
- 1 Tbsp. parsley, minced
- 1 1/2 tsp. lemon juice
- 1 tsp. dill
- 2 Tbsp. dry vermouth or chicken broth
- bread crumbs
- Hungarian paprika
Directions

1Preheat oven to 400°.

2Coat individual ramekins with olive oil. Melt 3 tablespoons butter and mix in pepper, onion, garlic, salsa, parsley, lemon juice, dill and vermouth (or chicken broth).

3Stir in scallops, gently coating them well.

4Divide the mixture in two ramekins.

5Sprinkle bread crumbs and Hungarian paprika over top to taste.

6Bake 15 minutes.
