  • 20 round large buttery style crackers
  • 1 Tbsp. parsley flakes
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground red pepper
  • 12 oz. to 16 oz. small scallops
  • paprika for garnish
  • 1/2 tsp. dried oregano
  • 2 oz. whipped butter
  • 4 oz. cheddar cheese

Directions

    Preheat oven to 350°. Crush crackers to fine crumbs.

    In 2 qt bowl, mix together crumbs, parsley flakes, oregano, garlic powder, and red pepper, stir in butter.

    Add scallops and cheese, mix well. Turn into individual baking dishes that have been sprayed with non-stick coating, or well buttered.

    Sprinkle with paprika. Bake 15 minutes.

    Serve with brown rice. Serve 4 - 6 people.
