  • 1 cup reduced-fat biscuit/baking mix
  • 2 large egg whites
  • 1 large egg
  • 1/4 cup fat-free milk
  • 1/4 cup finely chopped onion
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1-1/2 cups fat-free cottage cheese
  • 3/4 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large egg whites
  • 1 large egg
  • 1 teaspoon dried minced onion

Directions

    In a small bowl, combine the biscuit mix, egg whites, egg, milk and onion. Spread into a greased 11x7-in. baking dish.

    In another bowl, combine the filling ingredients. Gently spoon over biscuit mixture.

    Bake, uncovered, at 350° for 28-32 minutes or until golden brown and a knife inserted in the center comes out clean.
