- 1 small hubbard squash
- 23 cup raw cashews
- 12 cup water
- 1 fresh garlic clove, minced
- 12 teaspoon salt
- 12 teaspoon seasoning salt
- 34 cup whole wheat bread crumbs
Directions

1Peel squash and cut into 1/2 inch cubes.

2Place in pot, cover with water and simmer over low heat until tender.

3Drain water.

4Place cashews and water in blender and blend until smooth and creamy.

5Place cooked squash in bowl.

6Add seasoning and beat with electric beater until smooth.

7Pour in blended mixture and combine well.

8Spoon squash into an oiled casserole dish and cover with bread crumbs.

9Bake in a preheated oven at 325 for 20 minutes.
