- 5 to 6 yellow squash
- 1 chopped onion
- 1 egg
- 1/2 c. mayonnaise
- 2 c. sharp Cheddar cheese
- 2 Tbsp. melted butter
- crumbled Ritz crackers
- 1/4 c. melted butter
- salt and pepper to taste
Directions

1Boil onion and chopped squash until tender and drain.

2Add butter, mayonnaise, egg, salt and pepper.

3Mix well.

4Fold in cheese and pour into 8 x 8 greased casserole dish. Top with Ritz crackers, crumbled and mixed with melted butter.

5Bake at 400° for 15 to 20 minutes or until bubbly.
