  • 5 to 6 yellow squash
  • 1 chopped onion
  • 1 egg
  • 1/2 c. mayonnaise
  • 2 c. sharp Cheddar cheese
  • 2 Tbsp. melted butter
  • crumbled Ritz crackers
  • 1/4 c. melted butter
  • salt and pepper to taste

Directions

    Boil onion and chopped squash until tender and drain.

    Add butter, mayonnaise, egg, salt and pepper.

    Mix well.

    Fold in cheese and pour into 8 x 8 greased casserole dish. Top with Ritz crackers, crumbled and mixed with melted butter.

    Bake at 400° for 15 to 20 minutes or until bubbly.
