Tomatoes Ala-Mushrooms

- 4 tomatoes
- salt to taste
- 2 Tbsp. chopped onions
- 1/4 c. butter
- 1/2 c. finely chopped fresh mushrooms
- chopped parsley
Directions

1Make a circular cut around the stem end of the tomatoes; remove this part and squeeze tomatoes to remove the water and seeds without spoiling their shape.

2Season with salt and place in an oiled baking dish.

3Bake for 4 minutes in a 450° oven.

4Stuff tomatoes with mushroom stuffing, prepared as follows:

5Saute chopped onion in butter and add finely chopped mushrooms.

6Brown until almost all liquid has evaporated.

7Season with salt and parsley.

8Bake stuffed tomatoes in a 450° oven for about 15 minutes.

9Serve immediately.
