Ingredients
- 3 lb. yellow squash
- 1/2 c. finely chopped onion
- 2 eggs, slightly beaten
- 1/2 stick margarine or butter
- 1 Tbsp. sugar
- 1 tsp. salt to taste
- 1/2 tsp. black pepper to taste
Directions

1Wash, slice and boil squash until tender.

2Drain thoroughly. Melt margarine in a 9 x 13-inch glass baking dish.

3Add squash and onion.

4Mix beaten egg, salt and pepper (I use a dash of hot sauce); mix with squash.

5Cover with cracker crumbs and 2 tablespoons melted butter.

6Bake in a 375° oven until done or brown.
