Baked Squash

Ingredients

  • 5 to 6 medium squash
  • 1 c. grated carrots
  • 1 small chopped onion
  • 1/4 c. chopped bell pepper (optional)
  • 1 small container sour cream
  • 1 can cream of mushroom soup
  • 1 pkg. Pepperidge Farm stuffing mix
  • 1 stick margarine

Directions

    Boil squash until tender; drain and combine all ingredients except the stuffing mix and margarine.

    Melt margarine and add to stuffing mix.

    Put 1/2 of mixture in bottom of baking dish, cover with the squash mixture and top with the remaining stuffing mixture.

    Salt and pepper squash to taste while squash is boiling. Bake at least 45 minutes at 350° or long enough for carrots to cook.
