  • 5 lb. yellow squash (about 10)
  • 2 eggs, beaten
  • 1 c. soft bread crumbs
  • 2 Tbsp. chopped onions or to taste
  • 1 stick butter/margarine
  • 1/4 c. sugar
  • salt to taste
  • generous dash of pepper

Directions

    Cut squash into large pieces.

    Boil until tender; drain and mash (leaving some chunks).

    Mix with remaining ingredients and pour into 3-quart casserole dish.

    Add additional buttered bread crumbs on top and bake in preheated 350° oven for 30 to 60 minutes or until lightly browned.

    Serves 10.
