- 2 squirrels, cut up
- flour
- salt and pepper
- oil
- 2 cans cream of mushroom soup
- 2 onions, sliced in rings
- 2 cloves garlic, minced
- 1/2 c. green onions and parsley
Directions

1Coat squirrel pieces with flour seasoned with salt and pepper. Brown in oil and remove from skillet.

2Line baking dish with foil and place cooked squirrel in dish.

3Add onion and garlic; sprinkle with salt and pepper to taste.

4Blend soup with a small amount of water.

5Pour over squirrel.

6Seal foil tightly.

7Bake at 325° for 2 hours.

8Open foil and add green onions and parsley.

9Reseal and cook for additional 10 to 15 minutes.
