- 6 c. sliced zucchini
- 1/4 c. chopped onion
- 1 can cream of chicken soup or mushrooms
- 1 c. sour cream
- 1 c. shredded carrot
- 1 (8 oz.) pkg. herb seasoned stuffing mix
- 1/2 c. melted butter
Directions

1Combine zucchini and onion.

2Boil for 5 minutes; drain. Combine soup and sour cream.

3Stir in carrot.

4Fold in zucchini and onion.

5Combine stuffing mix with butter.

6Spread 1/2 of stuffing mix in bottom of 9 x 13-inch baking dish.

7Spoon vegetable mixture on top and sprinkle with remaining stuffing. Bake at 350° for 30 minutes.
