Balsamic Mustard Chicken

- 4 chicken breasts
- 1 garlic clove, crushed
- 4 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil
Directions

1Put chicken breasts between two sheets of plastic wrap.

2Beat them lightly with the base of a heavy pan, taking care not to tear the meat.

3Then put the chicken in a dish just large enough to hold them in a single layer.

4Whisk together garlic, vinegar, mustard and olive oil.

5Season.

6Pour over chicken.

7Turn the breasts over so theyre completely coated in marinade.

8Set aside for 20 minutes.

9Drain off the marinade; reserve.

10Heat a griddle.

11Cook chicken for about 4 minutes each side or until cooked through (you can grill / broil the chicken if you dont have a griddle pan).

12Pour marinade into pan and boil for 1 minute.

13Drizzle over chicken and serve with a watercress, orange and red onion salad.
