  • 150 ml olive oil
  • 450 g red onions, peeled, sliced
  • 2 tablespoons brown sugar
  • 20 ml balsamic vinegar

Directions

    Heat oil over low heat, add onions and cook very slowly, stirring occasionally, for 30 minutes.

    Add sugar and allow to caramelise slightly.

    Add vinegar and cook for a further 10 minutes or until thick.
