  • 3 parsnips, peeled and coarsely chopped
  • 3 sweet potatoes, peeled and coarsely chopped
  • 3 large onion, quartered
  • 1/4 cup olive oil
  • 2tbs balsamic vinegar
  • 2 tsp chopped fresh rosemary
  • 1/2 tsp kosher salt

    Preheat oven to 450 F. Coat a large baking sheet with non-stick cooking spray.

    Place parnsips, sweet potatoes and onion on baking sheet. Drizzle with oil and vinegar; sprinkle with rosemary and salt.
