- 3 sweet potatoes, peeled and coarsely chopped
- 3 large onion, quartered
- 1/4 cup olive oil
- 2tbs balsamic vinegar
- 2 tsp chopped fresh rosemary
- 1/2 tsp kosher salt
Directions

1Preheat oven to 450 F. Coat a large baking sheet with non-stick cooking spray.

2Place parnsips, sweet potatoes and onion on baking sheet. Drizzle with oil and vinegar; sprinkle with rosemary and salt.
