  • 2 tablespoons olive oil
  • 1/4 cup finely chopped onion
  • 1 tablespoon garlic
  • 1 pound boneless, skinless chicken breasts, sliced into 1/2-inch strips
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 3 tablespoons pine nuts
  • Salt and pepper
  • Mixed greens
  • Fresh grated Parmesan cheese
