Bamboo Chicken

Ingredients

  • 1/2 lb. cooked (in salt water) shrimp
  • 1 c. fish sauce
  • 4 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 c. frozen green or snow peas
  • 1 lb. cooked chicken breast, diced
  • 5 Tbsp. dry sherry
  • 1 Tbsp. soy sauce
  • 2 cans bamboo shoots (l lb. or 454 g)
  • 6 fresh mushrooms

Directions

    Cook shrimp, fish sauce, sugar and salt on high for 5 minutes. Add peas, chicken, sherry and soy sauce.

    Stir to combine all ingredients well.

    Bring to a boil.

    Add bamboo shoots and mushrooms.

    Stir and heat thoroughly.
